HEALTHY CHICKEN & VEGETABLE CURRY SOUP - Food Jar

Ingredients:
Coconut Oil – 2 tbspChicken breasts - 2
Chopped onion – ½ cup
Sliced Carrots – ¼ cup
Brocolli Florets – ¼ cup
1 medium cubed potato
Cherry Tomatoes halved - 8
Ginger minced – ½ tbsp
Garlic – ½ tbsp
Curry powder -2 tbsp
Turmeric powder – 2 tsp
Chicken broth – 3 cups
Thick Coconut Milk - ½ cup
Fresh Coriander leaves – ¼ cup
Salt & Pepper to taste
SERVING SIDES:-
Sliced Baguette
Green Apples
Cucumber
Dried Apricots
Babybel Cheese
Method:-
In a pot, add coconut oil on medium heat.
Add the chopped onion, ginger, garlic, carrots, potatoes, chicken breasts, salt and pepper, stir well and saute for a few minutes.
Add the curry powder, turmeric and stir well.
Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.Once the chicken is cooked remove the chicken and shred it.
Add the shredded chicken back into the pot along with halved cherry tomatoes, Broccoli florets and coconut milk and let it simmer for 5 min.
Garnish with coriander leaves and serve with baguette/rice.
