Baked Mac n Cheese Cups- Bamboo Lunchbox

MAC & CHEESE CUPS

Ingredients:

Elbow macaroni – 2 cups
Cheddar cheese grated – 1 ¼ cup
Butter – 2 tbsp
Flour - 2 tbsp
1/2 cup whole milk
Salt & Pepper
Spring onions – Garnish


METHOD:-
Preheat the oven @ 180 C and line a muffin tray with cupcake liners.
Cook the macaroni as per the instructions. Drain and keep aside
In a pan, melt the butter and add the flour and whisk for a few minutes. Add the milk and continue whisking till no lumps.
Add the cheese and the pasta. Season with salt and pepper and stir well till well combined.
Scoop the Mac n cheese mixture into the muffin tray & press them well such that they are tightly packed.
Top it with more cheese and bake them for 20 - 25 minutes until completely set.
Allow them to cool and then remove. Garnish with spring onions and Enjoy!!
